If you've simply motored through the South and tried them in a restaurant then you've not had real grits. My hubby makes this wonderful sausage/cheese grits casserole that is to die for. Instead of water the grits are cooked in lite chicken broth. It really makes a difference and no extra salt is needed. Of course the chopped garlic, pepper, sausage, and cheese help make a great dish as well.
